My parents are from a town in San Luis Potosi, Mexico. These red tacos are traditional from San Luis Potosi.
In San Luis Potosí you will find that they are very popular. People all around the area sale these delicious tacos. I remember that my parents use to make them all the time when I was growing up. And they were always the food that took as back to our home town in Mexico.
I would like to share with you a recipe to making these delicious tacos that my mom showed me how to make. I was extremely excited to learn how to make them and trying to make them for the first time. I hope that you find them fun to make and that it will inspire you to one day travel to San Luis Potosí and try these tacos over there!

Ingredients to make the red tortillas
½ A bag of corn Maseca for tortillas
3 Chile Ancho Pepper
2 cups of water
Steps to making the tortillas
- In a pot boil water and add the Chile Ancho Pepper. Boil until the pepper has softened.
- Once the pepper is soft you blend it by itself for about 2 min or until you see it pretty blended.
- Then in another bowl add your half a bag of Maseca and then you will add the soft blended pepper.
- Then you will add the 2 cups of water into the bowl with the Maseca and the pepper. You need to mix until the mixture is soft to make the tortillas.
- Once you have your mix ready you begin to make the tortillas.
- You can use a tortillas maker.
Ingredients to make the tacos
- 4 Potatoes
- 6 Carrots
- 4 Cups of water
- ½ lbs. Chorizo
- 1 cup of Cooking oil
- ½ a Spoon of salt (optional)
- Lettuce (depends on you how much to have as a side to the tacos)
- Tomatoes (depends on you how much to have as a side to the tacos)
- Sour cream (optional on your tacos)

Steps to making the tacos
- Boil 2 cups of water in two different pans for the potatoes and for the carrots.
- When the potatoes and the carrots are soft you can take them out to dry.
- When they are dry begin to peel them and then you will cut them into little squares.
- On another pan begin to add the ½ lbs. of chorizo and cook it for about 15 to 20 minutes.
- When the chorizo is cooked you will add the potatoes and the carrots to warm them all together for about 10 minutes and you can add salt if that is what you would like some.
- Then you will begin to fry the tortillas in a pan with warm cooking oil.
- Now you can begin to make your tacos.
You can accompany your dish with some cut tomatoes and lettuce.
